Rosso, the Italian restaurant and lounge at Shangri-La Hotel, Jakarta, presents diners with a year long culinary trip to five of Italy’s most celebrated cities and regions: Milano (Milan), Modena, Venezia (Venice), Bologna and Firenze (Florence). From 16 February to 15 March 2009, Rosso features traditional dishes from the second city of the journey, Modena.
Modena is renowned in the culinary industry for its production of balsamic vinegar, an essential ingredient in authentic Italian home cooking. During the promotion, diners may enjoy appetiser to dessert à la Modena. For starters, guests may try uplifting dishes such as Marinated Eggplant Timbale with Ricotta, Aged Balsamic, Basil and Pine Nuts Oil, Steamed Altedo Asparagus with Quail Egg and Black Truffle, or Coppa with Tigelle Bread and Balsamic Reduction.
Guests who crave for pasta may choose one of the pastas of Modena for their main course. The team of chefs will prepare for each guest Potato and Leek Tortelloni with Braised Beef Leg, Basil Tagliatelle with Porcini and Cherry Tomato Sauce, or Ricotta Cheese and Rucola Canelloni with Pumpkin Sauce. Meanwhile, meat lovers may indulge their senses with one of three other main courses: Braised Veal Cheek with Aged Balsamic on Grilled Polenta, Oven Roasted Duck Breast with Aromatic Herbs and Lambrusco Sauce, or Braised Rabbit Leg with Pumpkins and Thyme Sauce. For closure, Chef Alessandro Santi prepares Ciambellina with Raisin and Vanilla Bean Sauce, Wild Strawberry with Balsamic Sauce and Lime, and Milk Ice Cream.
