      Rosso restaurant and lounge at Shangri-La Hotel, Jakarta present Italian style dishes with white truffle from 11 until 31 October 2010. The Rosso kitchen team prepares a variety of appetizers, soup, pasta, risotto, main courses and desserts, all which contain white truffle in their ingredients.

      Truffle aficionados will find the Italian style truffle dishes delightful. For appetizers, there are four types of antipasti using white truffle from Alba area. Asparagi Bianchi di Altedo Gratinati al Parmigiano con Salsa al Tartufo Bianco d’Alba (Gratineed Altedo White Asparagus with Parmigiano and white Truffle) and Insalatina con Funghi Misti di Bosco con Crostone di Pane all’olio e Tartufo Bianco s’Alba (Wild Mushroom Salad With Grilled Farm Bread, Extra Virgin Olive Oil anda White Truffle) are specially prepared for vegetable lovers.

      For diners who would like to have a light tasting appetiser, Rosso combines succulent foie gras and white truffle in Fegato d’oca in Padella con Pera Caramellata al Chianti e Tartufo Bianco d’Alba (Pan-seared Foie Gras served with Caramelised Pear with Chianti and White Truffle). Meanwhile, seafood lovers may choose Carpaccio di Ppolipo con Germogli di Spinaci e Condimento al Tartufo Bianco s’Alba (Mediterranean Octopus Carpaccio with Baby Spinach and White Truffle).

      Pasta lovers are provided three choices of pasta: Cappelletti di Manzo in Brodo Ristretto di Cappone e Tartufo Bianco d’Alba (Beef and Ricotta Cappelletti with Capon Broth and White Truffe), Taglierini all’uovo con Salsa al Burro d’Alpeggio e Salvia e Tartuffo Bianco d’Alba (Home made Taglierini with Alps Butter and White Truffle Sauce), and Ravioli di Ricotta di Mucca a Salsa al Tartufo Bianco d’Alba (Coe Ricotta Agnolotti with White Truffle).

      Guests who would like to savour warm soup may order Cappuccino di Funghi, Uovo d Quaglia in Camicia e Tartufo Bianco d’Alba (Mushroom Cappuccino Soup with Poached Quail Egg and White Truffle), while rice lovers may try Risotto Carnaroli al Tartufo Bianco d’Alba e foglia d’oro (Carnaroli White Truffle Risotto with Golden Leaf).

      And guests who would like to have meat for their main course may order Controfiletto di Wagyu con Vegetali all’olio d Frantoio e Tartufo Bianco d’Alba (Pan Seared Wagyu Sirloin with Seasonal Vegetable and White Truffle) or Filleto di Vittelo alla Griglia, Indiva Brasata, Tortino di Patate alle Erbe e Salsa Emulsionata al Tartufo Bionco a’Alba (Grilled Organic Veal Tenderloin served with Braised Endive, Potato Flan and Truffle Sauce). Meanwhile, fish devotees may enjoy white truffle in Spigola del Mediterraneo con Emulsione di Asparagi, Polenta Incatenata e Scaglie di Tartufo Bianco d’Alba (Mediterranean Wild Sea Bass Pot Roasted with Taleggio Polenta, Asparagus Emulsion and White Truffle).

      White truffle at Rosso can also be found in range of deluxe desserts. Ice cream enthusiast may take pleasure in Gelato al Cioccolato e Essenza di Tartufo (Dark Chocolate Ice Cream with Truffle Essence), while Mousse di Cioccolato Bianco e Scaglie di Tartufo Bianco d’Alba (White Chocolate and White Truffle Mousse) combines white chocolate and white truffle in glass.

      During the promotion, Rosso blends the finest ingredients with the most expensive mushroom in the world, White Alba Truffle. Growing symbiotically woth oak, hazel, poplar and beech and fruiting in autumn, they can reach 12 centimeters in diameter and 500 grams in weight, though they are usually much smaller. The flesh is pale cream or brown with white marbling. Like the French black truffles, Italian white truffles are held in very high regard. The truffle market in Alba is busiest in the months of October and November.

      With Prices starting from Rp 350.000++ per portion, guests may enjoy truffle dishes at Rosso during lunch and dinner. And for additional white truffle, Rosso charges US$5 per three grams.
